Start your day tour visiting Hautvillers, the craddle of Champagne. It is here is where Dom Pierre Pérignon (1638–1715) is popularly believed to have created and perfected the champagne method, which transformed the wine of Champagne into the king of wines.
Stroll around and discover the ancient heritage of the village as you wander through its narrow streets lined with winegrowers’ houses and admire the 140 beautiful wrought iron signs that evoke trades of the past. Don't miss the Hautvillers Benedictine Abbey where Dom Pérignon was a monk and cellar master and where he is buried today. His gravestone bears the epitaph "Here lies Dom Pierre Pérignon" — marking the passing of a celebrated monastic cellar-master whose legacy continues to inspire the production of vintage Champagne.
Here, you will also have the chance to enjoy a tasting from a small authentic producer, Gobillard. The birth of this vineyard dates back to 1933 when Gervais Gobillard decided to become independent and to the chagrin of his family bought with his meager savings 1 hectare of vines in Hautvillers. 37 years have passed, their values still remain the same, the company after a very good expansion is still prosperous. Champagne JM GOBILLARD & Fils is today present all over the world, the quality and its notoriety installs it among the greatest Champagne houses.
